SHUKTO
Cooking Instructions

Ingredients:
2 Bittergourd - fresh or frozen
2 Medium Size Potatoes – chopped
1 Medium Eggplant - cut in small cubes
1 green banana - cut in small cubes.
2 tablespoon Posto (Poppy seeds)
1teaspoon Mustard seeds
1 big cube Ginger
3 tablespoon Milk
1/4 teaspoon Turmeric
1/4 teaspoon Sugar
Salt to taste

Cut all the vegetables in two inch strips. Soak the poppy seeds and 1/2 teaspoon mustard in warm water for an hour. After draining it, make a paste of posto, mustard and ginger. sauté all the Vegetables well in it. Let the Vegetables brown a bit in Color.

Heat oil in a pan, add mustard seeds and the vegetables one by one. Sauté all the Vegetables well in it. Let the Vegetables brown a bit in Color.Then add half of the paste, turmeric and salt. Add 1/4 cup water and Cook on medium low flame for another 10-15 minutes. Add the rest of the paste, sugar and milk and let it cook until the vegetables are done. Offer it to Krsna and serve hot with rice.
You can add other vegetables like drumstick, parwal , pumpkin etc in Shukto but all the vegetables should be cut in thinstrips.

While we're on the subject of chilli, here is a recipe for my favourite simple one-pot dish. It is based on traditional Boboshanti Rastafarian style vegan cooking, adapted because we can't get the awesome scotch bonnet chilli they use in Australia easily.

Serves 3-4
Ingredients:
1 Cup Rice
440 ml can Coconut Milk
1 cup cooked Red Kidney Beans
2 tbsp. Coconut Oil
1 tbsp. Cumin Seeds
1 tsp. Asafoteda Powder (Hing)
1-4 Green or Yellow Chillies finely chopped. Adapt according to your personal wuss-factor.
1 Green Capsicum (Bell Pepper) diced
Salt to taste

Heat the oil in a pot. Add the cumin seeds, chilli and asafoteda. Fry for a minute. Add the rice and continue frying for a few minutes. Add the remaining ingredients, stir and bring to boil. Cover and cook over a low heat for about 12-15 minutes. Add a little water if needed.

Everyone loves this dish. It is cheap, rich, tasty and spicy. You can't lose.

Patra Bhajia

For 20-25 patras.

Ingredients:
15-20 large patra leaves (colocasia leaves)

paste ingredients:

1/2 cup tamarind extract (juice)
1 cup gramflour (besan)
3 t chilli powder 1/2 t turmeric powder
3-4 pinches asafoetida
1 t crushed cumin seeds
3 t powdered sugar
1 T oil salt to taste

For seasoning:

1 T oil
1/2 t each cumin & mustard seeds
1 t sesame seeds
1 T coriander leaves finely chopped
1 T coconut grated fine

patra:

Clean, wash and wipe the leaves. Cut thick veins with a pair of scissors. Roll lightly with a rolling pin. Keep aside.

Mix all paste ingredients (not those for seasoning). The mixture should be a thick paste. Place a leaf backside up on a flat work surface.

Take a little paste and apply thinly all over leaf surface. Place another leaf over it. Repeat.

Keep stacking until you have 3 or 4 layered leaves, top layer being that of paste. Fold in the edges and roll the leaves, starting with their base towards tip. Make the roll tight and seal sides with some paste. Repeat for all the rolls.

Place the rolls in a double boiler or steam cooker. Steam in the cooker for 30-40 minutes till cooked.

Cool, and remove. Cut into 2-centimetre (1/2-inch) slices. When cooled well, arrange on a serving plate, and season as follows:

Heat oil, add seeds, allow to splutter, remove from heat. Add sesame, coriander, and coconut. Place spoons of seasoning on the patra. Serve.

Note: The patra can also be deep-fried after steaming and slicing (as in above photo) before the seasoning stage.

Flatbreads - Lebanese Wrapper Bread

6 (12-inch) breads

Preparation Time: About 1 1/2 hours to prepare and roll out the dough; 2 1/2 to 4 1/2 hours for rising; 30 to 40 seconds to bake each bread.

This is lavosh­large, thin, flexible Middle Eastern flat breads, made from a strong, yeasted wheat dough. They’re used for scooping or wrapping up vegetable or bean dips, salads, or kebabs. You can bake them either on a sheet in a hot oven or on top of the stove, draped over an inverted wok or on a griddle if the breads are small enough to fit. As with pita, the yeast in this dough contributes to its flavor and texture; the bread doesn’t rise when baked.

Ingredients:
1/4 teaspoon active dry yeast
1/2 cup lukewarm spring water
1 1/4 to 1 1/2 cups whole wheat bread flour
1/2 teaspoon sea salt

In a medium-sized mixing bowl, sprinkle the yeast over the warm water. Sprinkle in a teaspoon of flour, cover, and set in a draft-free spot for a few minutes to proof the yeast. Stir in one-half cup of the flour to form a batter. Cover and set it aside for about thirty minutes, until a sponge develops.

Stir in the salt. Add flour, 1/4 cup at a time, stirring after each addition, until a dough forms. Turn it out onto a lightly floured surface and cover it for several minutes.

Thoroughly knead the dough, lightly sprinkling flour under it only as necessary to keep it from sticking. When the dough is smooth and resilient, form it into a ball. Place it in a lightly greased bowl, cover, and set it aside for one to two hours, until the dough has risen and does not rebound when pressed with a finger.

Turn the dough out and knead it a few times. Return it to the bowl, covered, to rise a second time.

Cut the dough into six equal pieces and roll each one into a ball. Set the balls on a lightly floured surface and cover them for thirty minutes.

On a lightly floured surface, with a rolling pin, roll each ball into a 12-inch circle. Stack them, separated by waxed paper and covered with a damp towel.

Preheat the oven to 500°. Bake bread on an ungreased pan for fifteen to twenty seconds on each side. Alternatively, use a hot griddle or inverted wok on top of the stove. In any case, work quickly so that the breads stay soft and flexible.

As each bread is done, fold it in quarters, and wrap it in a dry towel. Serve the breads warm.

Note: Refrigerate or freeze the breads when they have cooled thoroughly. Wrap and reheat at 350° for several minutes.

Amandita Sabji

Ingredients:
Butternut Squash, 2
Avocados, ripe, 8
Apple, tart, 1
Coconut, grated, 1 Cup
Ghee, 2 Tablespoons

In a heavy bottom pot, boil the two cubed butternut squash in 1/8 cup water. When half-cooked remove from heat, transfer to another bowl and set aside with liquids. Cut up the 8 avocados and put in bottom of pot. Pour the squash and liquids on top of avocados. Dice the apple and toss in, then pour in coconut. Drizzle two tablespoons of ghee over the top. Don’t add any spices, and don’t stir the pot. Cover and slow cook until the avocados break down. When all the ingredients are very soft, and the moisture is nearly all absorbed, watch the pot closely. As soon as the moisture turns to a skin, almost ready to burn, remove pot from heat, re-cover and set aside for a few minutes. Scrape up remnants on bottom of pot and mix into the prep, stirring just enough to slightly blend the mixture, then offer.

Shakarkand Kofta

Ingredients:
Sweet potato, red (shakarkand), 1 Pound
Chenna, 1/3 Pound
Milk for Chenna, 1 Quart
Lemon juice for Chenna, 1/4 Cup
Cashew nuts, 1/2 Cup
Khas Khas (white poppy seeds), 1/4 Cup
Ginger, minced, 2 Tablespoons
Anardana (pomegranite seed powder), 1 Teaspoon
Anar (pomegranite syrup) or orange pulp, 1-1/2 Tablespoon
Red Chilis, flaked, 1 Teaspoon
Jalapeno, 1
Asofoetida, 1 Teaspoon Tomato puree, 1/2 Cup
Cream, heavy, 1/4 Cup
Garam Masala, 2 Teaspoons
Chickpea Flour (Besan), 2 Tablespoons
Ghee, 2 Tablespoons and for frying
Salt, To taste

Bake or boil the sweet potato, peel, and mash along with minced jalapenos, besan, salt and anardana powder. Set aside. Mash together the paneer, anar syrup and salt to taste. Divide this mixture up into 12 balls. Now divide the sweet potato mixture up into 12 balls. Flatten a potato ball between your palms, put a chenna ball in the center, and pull the potato pattie up to completely encircle the ball. Heat the ghee (all but 2 tablespoons) in a wok or kadhai and fry the kofta balls till they’re golden brown. Remove, drain and set aside. To make the gravy, chaunce the cashew pieces, khas khas, red chilis, and minced ginger. During last minute, add the asofoetida and salt. Add 1 cup water and simmer for 10 minutes. Add the anar syrup and tomato puree and cook for 5 minutes. Add the garam masala and fresh cream, stir in thoroughly, and pour the gravy over the kofta. Offer hot.

Blackberry Almond Chatni - Chutney

Ingredients:
Blackberries, fresh, 2 Cups
Almonds, sliced, 1 Cup
Ginger, fresh, 2 Inches
Raisins, dark, 1/2 Cup
Coriander, powder, 1 Teaspoon
Cumin seeds, 1 Teaspoon
Anise, ground, 1/8 Teaspoon
Red Chilis, flaked, 1/4 Teaspoon
Jaggery, 1/2 Cup
Butter, 2 Tablespoons

Put the butter in the bottom of a heavy pan. Add the almonds and cook till they brown a few shades. Add the chilis, minced ginger and raisins and cook until the raisins plump. Add all remaining ingredients except anise and jaggery, and cook on low heat until the berries break down completely. Add the jaggery and continue cooking for another 30 minutes on low heat, until the chutney takes on a good glaze. Remove from heat, stir in the anise powder. Bring to room temperature or cool, and offer.

Jackfruit Payasam / Chakkai Pradaman

Ingredents:
1 cup ghee
1 cup sweet ripe jackfruit-peeled and diced
1 cup coconut milk (or cream)
1 cup sugar or to taste
2 cardamoms-powdered
1 tsp ginger powder
1 tbsp raisins
1 tbsp cashew nuts-cut up

Method: Heat the ghee and stir-fry the jackfruit in it till a little soft. Add a cup of water and cook till cooked through. Add the sugar and stir till dissolved. Add coconut milk and simmer for a minute or two. Serve garnished with the cardamom and ginger powders, and then the raisins and nuts.

BESAN LADDU

Ingredients :
500 gm besan, sifted
500 gm ground sugar
200 gm ghee
1 tsp green cardamom or elaichi , powdered

Preparation :

Heat the ghee until it smokes, then lower the heat. Add the besan and fry on a medium heat until it is a golden colour. Take it off the fire for two or three minutes and add the sugar.

When it is cooled to a comfortable temperature, grease your palms with ghee and form the mixture into balls.

Set aside to cool and harden. Store in air-tight containers.

Gopi Jamuns

Ingredients:
Pineapple, cubed, 1 Cup
Sugar, 1 Cup
Rava (semolina), 2 Tablespoons
Milk, 1/2 Cup
Chenna, 1 Cup
Milk for Chenna, 1/2 Quart
Lemon Juice for chenna, 5 Tablespoons
Saffron, A Pinch
Ghee, For frying

Soak the saffron in a teaspoon of milk and set aside. Roast the rava and spread on a plate to cool. Add the chenna and remaining milk to the rava and knead it to a smooth, hard dough. Divide the dough into lemon-sized balls. Cut the pineapple into cubes. Insert one cube into each jamun ball and roll dough to completely encase the fruit. Heat ghee in a wok or kadhai and fry the jamuns at low heat until dark golden brown. Make the syrup by bringing one cup of water and the sugar to a boil for several minutes. Add the saffron and stir in. Remove from heat, add the fried jamuns to the sugar syrup. Serve hot.

The Vedic literature says like this, that God has no leg, no hand. Therefore the impersonalists take advantage of it. "Oh, here it is stated God has no legs, no hands." But the next line is, javana grhita: "He can accept everything which you offer Him in devotion."

Now how He can accept? If He has no hand, how He can accept things from us? That means He hasn't got a hand like us. His hand is different. Therefore even though He is situated in the spiritual world, which is far, far away from us, still, He says in the Bhagavad-gita, it is said,

patram puspam phalam toyam
yo me bhaktya prayacchati
tad aham bhakty-upahrtam
asnami prayatatmanah

Krsna says that "A little flower or little water or a little leaf, whatever My devotee offers Me in love and devotion, I accept it." And tad aham bhakty-upahrtam. "And because he has brought it with great devotion, therefore I eat." Tad aham bhakty-upahrtam asnami. Asnami means "I eat." Now you can say, "All right, I'll offer these fruits and flower to God, but it is the same. It is remaining. How He is eating?" But His eating is not like my eating, because He hasn't got a body like this. This body is material. If you bring me a plate of fruits, this body immediately swallows it. But He has got spiritual body. He eats... Simply as soon as He knows that you have offered it in devotion, He eats immediately.

Animals on today's factory farms have no legal protection from cruelty that would be illegal if it were inflicted on dogs or cats: neglect, mutilation, genetic manipulation, and drug regimens that cause chronic pain and crippling, transport through all weather extremes, and gruesome and violent slaughter. Yet farmed animals are no less intelligent or capable of feeling pain than are the dogs and cats we cherish as companions.

Social scientists and law enforcement officials have identified animal abuse as a symptom of emotional illness and a precursor to violent crimes against human beings.
