transferred back home, back to Godhead.

ALOO PASTRY PUFFS
Ingredients
1 pastry puff sheet (this is found
in the frozen foods section)
1 big potato (Aloo)
Some cumin seeds
Some fennel seeds
1/2 teaspoon of garam masala
A pinch of turmeric
Salt to taste
Method
Boil the potato, peel the skin and
mash it, but not like a paste.
Take the pastry puff sheet and cut
into 9 small squares.
In a kadai, put a little oil and add
the cummin seeds. When they
splutter add the
fennel seeds. Fry for about 30 seconds
and add the smashed potato.
Add garam masala, turmeric and salt.
Mix everything well and keep
on flame for about a minute. Remove
from gas and allow it to cool
a little bit, say for about 5 minutes.
Now take the square piece of the pastry
puff sheet and put some
of the potato mixture in the centre.
Dip your finger in water and apply
water on all the four sides of
the sheet so that the sides can be
stuck.
Now fold the square piece diagonally,
in the shape of a triangle.
Make the remaining squares pieces
in the similar way.
Preheat the oven to 400 degrees F.
Place the made pastries in a baking
tray and bake it for
approximately 20 minutes or until
the puffs are golden in color.
Once they turn slightly golden then
turn it over and allow the
other side to cook too.
Ready to offer.

CHILLY CHEESE TOAST
Ingredients
2 medium sized handfulls of chopped
cabbage
1 medium sized capsicum
200 gms cheese (grated)
3-4 green chillies
2 tbsp cooking oil
6 slices of fresh home made bread
(if you don't have a recipe I can send)
50 gms butter
Salt to taste
Method
Chop the cabbage, capsicum and green
chillies finely.
Saute the cabbage in the oil till
transparent.
Now, add the salt, green chillies
and the capsicum pieces
also and saute till done.
Do not overcook the capsicum as it's
flavour is best when
lightly cooked.
Add the cheese to the vegetables and
stir continuously till
it melts and forms a paste.
Divide the above vegetable paste to
six equal portions.
Apply butter on one side of each slice
and the vegetable
paste on the other side.
Spread the paste evenly on the bread
slice.
Toast on tava or snack toaster (with
the buttered side
downwards) till done.
Serve hot with tomato ketchup.

SABUDANA KHICHARI
Ingredients
1 cup sabudana (sago)
1/2 cup roasted peanuts
1 medium sized potato
10 green chillies
3 tbsp. coriander leaves
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp urad dal (omit this
and prepare for EkAdasii prep too)
some slices of fresh coconut (two
inch long 1/16th inch thick)
2-3 tsp oil or ghee
Salt
Method
Soak sabudana (sago) overnight in one
cup water
Grind the roasted peanuts into a fine
powder.
Heat oil and add mustard seeds, cumin
seeds and urad dal.
Fry till urad dal is golden brown.
Chop potato into small pieces (1/2
inch cubes) and slice
the chillies.
Add chopped potatoes and chillies
to the oil.
After the potatoes and chillies are
cooked add the soaked
sabudana (sago) and fry for a minute.
Skittle fry in oil or ghee the coconut
slices until light
golden brown both sides.
Now add the peanut powder, salt and
keep frying for about
8-10 minutes.
Garnish with finely chopped coriander
leaves .
Ready to offer

SWISS CIRCLES (take me to Geneva)
Ingredients
4 slices of soft fresh bread
100 gm. paneer grated
1 bell pepper finely chopped
1 tbsp butter
2 green chillies deseeded & finely
chopped
1tbsp tomato ketchup
1 pinch garam masala
1/2 tbsp salt, 1/4 tbsp chilli powder
2 tsp cornflour or maida with 2 tsp
water to make a paste
Method
Grate paneer and add all other ingredients
to make a paste.
Cut the sides of a buttered slice,
keep it flat on a rolling board.
Press, applying pressure with a rolling
so that the holes of the bread close.
Apply a layer of the filling and roll
the slice carefully.
Seal the edges with cornflour paste.
Keep the roll, rolled up in a cloth
for at least 10-15 min.
Deep fry each roll in hot oil till
golden .
Serve hot with chilled mint (podina) chutney or podina and green chilli chutney.

CATLOOMA
Ingredients
Maida 450 gms.
Salt to taste
Warm Oil 2 table spoon
Cornflour 3 table spoon
Butter 2 table spoon
Method
Mix the cornflour & butter to form
a paste
Add warm oil to maida and make smooth
dough with cold water.
Keep it aside for some time.
Make 16 balls of dough. Roll out each
ball like chappati,
apply one tea spoon of paste evenly
on it, then make a hole
on the centre of the chappati and
roll it outwards.
Make it flat and again roll it like
a chappati.
Then cook on a hot tawa. Apply ghee
or oil (dalda.)
Cook till it is brown on both sides.

Serve hot.

BANARASI BACKLAVA
Ingredients
Maida flour (2 cups)
Butter (4 tsp.)
Almonds (few)
Cashewnuts (few)
Shredded coconut (200g)
Cardamom (few)
Powdered sugar (1/2 cup)
Milk Maid (1/2 cup) (condensed milk)
Raisins (few)
Pisthachio nuts (few)
Hot sugar syrup
Cloves (few)
Cooking oil / ghee
Method
To maida, add butter and mix them well.
Sprinkle water to
obtain hard dough.
Keep aside for 1-2 hour.
Mix ingredients together(except maida
flour and butter for
stuffing purposes.)
Prepare hot sugar syrup by dissolving
sugar in water, heating
to get one string consistency.
Flatten dough (to approx. 5-6 cm in
dia.) and place stuffing
on it. Fold the dough in such a way
that the stuffing is
securely held in place inside. One
way to secure this filling
is by piercing the clove through the
folds.
Fry this stuffed dough in oil and
place these in the hot sugar
syrup for 2-3 minutes.
Backlava is ready for offering and
serving.

INSTANT JALEBIES
Ingredients
1 1/2 cup flour (Maida)
1/2 tsp baking powder
1/4 tsp salt
1 cup fresh curds and 1/2 cup blended
together 70 gm Cheese-grated
Oil for frying
For Syrup
1 cup sugar
1 cup water
1 tbsp milk
Pinch of saffron
Method
Mix together the blended curds and
sifted flour.
Blend in the cheese.
Whisk briskly and keep aside, for
15-20 minutes.
Meanwhile make the syrup by boiling
together the sugar and water.
Add the milk and remove the scum from
the surface.
Boil till you get a syrup of `one
thread' consistency.
Heat oil, preferably in a non-stick
frying pan.
Put the jalebi mixture in a plastic
bag or piping nozzle and
pipe 7 cm rings in hot pan.
Fry till golden and immerse in warm
syrup for 5-7 minutes.
Serve hot.

BREAD - LIKE THE BAKERS MAKE - BUT BETTER.
This recipe is from the "Kurma" cookbook "Great Vegetarian Dishes" page 34.
Preparation Time: 50 mins
Dough Rising Time: one and half hours
Baking time: 45 mins
Makes 2 loaves
6 teaspoons (30 ml) fresh yeast
1 tablespoon (20 ml) brown sugar
2 1/2 cups (625 ml) warm water
1/2 (125 ml) gluten flour
2 teaspoons (10 ml) salt
6 cups (1.5 litres) wholemeal flour
1 tablespoon (20 ml) oil
little milk
sesame seeds
1/. Combine the yeast, sugar, and warm
water in a small bowl, crumbling
the yeast and mixing it well. Leave
this bowl undisturbed in a warm place
for 10 minutes or until frothy.
2/. Combine the gluten flour, salt,
and half the wholemeal flour in a
large bowl. Add the yeast and the
oil. Mix with a wooden spoon until well
combined. Let it stand, covered, for
30 minutes.
3/. Stir the mixture. Add flour to
make a soft dough. Turn the dough out
onto a floured board and knead it
for 8-10 minutes or until smooth and
elasitc.
4/. Wash and oil the mixing bowl.
Roll the dough into a ball, coat it with
oil, and place it in the bowl, covered.
Let it rise in a warm place for one
hour or until it has doubled in size.
5/. Punch down the dough with your
fist and knead again lightly. Shape it
into 2 loaves. Place the loaves into
oiled loaf tins and cover them,
placing them in a warm spot for another
30 minutes or until doubled in
size. Meanwhile, preheat the oven
to 200 Centigrade/Celsius - 390 F.
6/. Brush the risen loaves with milk
and sprinkle them with sesame seeds.
Place them in the hot oven and cook
for about 45 minutes or until golden,
crisp, and hollow-sounding when tapped.
Remove the tins from the oven and
let stand for 10 miutes.
Now you can carefully invert the bread tins and turn out the loaves, placing them on cooling racks. When the loaves are completely cool, slice and use as required.

AIDS, chlamydia, ebola, influenza
