Green Rice (Arroz Verde)

Ingredients:
3 tablespoons canola oil
2 cups firmly packed fresh cilantro (coriander) leaves
1/2 teaspoon hing
1 1/2 cups diced chopped white cabbage
2 cups firmly packed spinach leaves
3 poblano chiles
4 cups warm water
2 cups long-gran white rice
Kosher salt and freshly ground black pepper

Directions:

Pureed spinach and cilantro add a beautiful green hue and zesty taste to boiled rice, taking it far beyond a mundane side dish.

1. Roast and peel the poblano chiles.

2. Heat a medium-size pot over medium-high heat, add the oil, dicedchopped white cabbage, and hing powder and saute until the cabbage is translucent. Add the rice and cook for 2 minutes more. Add the water and bring to a rapid boil over high heat. Lower the heat, cover, and cook for 20 minutes, or until all the water is absorbed and the rice is cooked. Remove the pan from the heat and let the rice cool.

3. Meanwhile, in a large pot, cover the spinach and cilantro (coriander) with water. Bring just to a boil and then drain and shock the spinach and cilantro under cold water. Working with a handful at a time, squeeze out the excess water.

4. In the jar of an electric blender, combine the spinach, cilantro, and poblanos and puree until smooth. In a bowl, blend the rice with the spinach puree and season to taste with salt and pepper. In a saucepan, heat the rice over medium heat, stirring frequently, and serve.

Black Bean Burgers

Packed with vegetable protein, these burgers are so flavorful, even meat lovers will be impressed.

Serving: 6
Prep Time: 25 minutes
Cook Time: 12 minutes
Total Time: 37 minutes

Ingredients:
2 tsp olive oil
1 cup chopped/fine chopped or grated white cabbage
2 tbsp spicy BBQ sauce (use tamarind sauce)
1 cup frozen corn, thawed
1/2 cooked cup rice
1 15-oz can black beans, drained and rinsed
1/2 cup walnuts, toasted and ground to a coarse powder
1 cup dry bread crumbs
1 tsp hing
salt

1. Heat oil in skillet over medium heat. Add grated white cabbage and cook until edges start to brown, about 5 minutes.

2. Add corn and BBQ sauce. Cook, stirring, for a few minutes to blend flavors. Remove pan from heat.

3. Place corn mixture, rice, and beans in a food processor. Pulse several times until ingredients are blended, but mixture is still chunky.

4. Transfer mix to a large bowl. Add nuts and bread crumbs. Mix with a large spoon until thoroughly combined. Season with salt to taste.

5. Divide and shape mixture into 10 small burgers or 6 large ones. Add more bread crumbs if mixture does not hold together well.

6. Prepare grill or preheat broiler.

7. If using a grill, place patties on vegetable grid. If broiling, place patties on pan lined with lightly oiled aluminum foil.

8. Grill over medium hot coals, or broil 3 to 6 inches from heat until lightly browned, about 4 to 6 minutes each side. Serve immediately.


Eggless Mayonnaise

Here are three different recipes for eggless mayonnaise, lifted from my first cookbook 'Great Vegetarian Dishes'.

The first recipe uses condensed milk as the base and is a sweet mayonnaise. The second recipe calls for evaporated milk, and the third is a dairy-free variety featuring pureed tofu.

 Mayonnaise I

PREPARATION TIME: a few minutes

SETTING TIME: 10 minutes

YIELD: about 1 1/2 cups

Ingredients:
1 cup (250 ml) sweetened condensed milk
4 tablespoons olive oil
1/2 teaspoon salt
1 teaspoon mustard powder
4 tablespoons fresh lemon juice
1/4 teaspoon black pepper

Combine all the ingredients except the lemon juice in a bowl. Gradually add the lemon juice whilst stirring with a whisk until the dressing thickens. Allow the mayonnaise to set for a further 10 minutes in the refrigerator.

Mayonnaise II

PREPARATION TIME: a few minutes

SETTING TIME: 10 minutes

YIELD: about 2 1/4 cups

Ingredients:
1 cup (250 ml) evaporated milk (unsweetened)
1 cup (250 ml) safflower oil
1/2 teaspoon salt
1 teaspoon honey (optional)
4 tablespoons fresh lemon juice
1 teaspoon mustard powder

Place the evaporated milk in a blender. While the blender is on, gradually add the oil until the mixture slightly thickens. Add the salt, optional honey, lemon juice, and mustard powder. Continue blending until the mixture thickens further. Allow the mayonnaise to set for a further 10 minutes in the refrigerator.

Mayonnaise III

PREPARATION TIME: a few minutes

SETTING TIME: 10 minutes

YIELD: almost 2 1/2 cups

Ingredients:
2 cups mashed firm tofu
1/2 cup (125 ml) olive oil
4 tablespoons (80 ml) fresh lemon juice
1 teaspoon mustard powder
2 teaspoons honey (optional)
1 teaspoon salt water (if required)

Combine all ingredients (except the lemon juice and water) in a blender. Blend until smooth and creamy. Gradually add the lemon juice. If the mayonnaise is too thick, add a little water. Refrigerate.


Mexicano Picadillo Tacos
Makes 14

These appealing tacos contain a sweet-savory filling that kids will enjoy. Keep tortillas warm before filling so they are pliable.

Ingredients: - Picadillo Taco Filling
1 12-oz. pkg. soy “ground meat”
1 medium-sized apple, cored and diced
1/2 medium-sized cabbage heart, finely diced 1 cup approx
1/4 cup currants or raisins
1 8-oz. can plain tomato sauce
1/4 to 1/2 tsp. cinnamon
Salt and freshly ground black pepper to taste

Tortillas
12 to 14 6- to 8-inch corn or flour tortillas
-
Toppings, Optional
Low-fat sour cream or vegan sour creamw
Grated low-fat cheddar cheese or vegan cheddar-flavored cheese

Directions:
1. To make Picadillo Taco Filling: Put soy “ground meat,” apple, finely copped cabbage, currants and tomato sauce into a saucepan, and bring to a boil over medium-high heat. Stir in cinnamon to taste. Reduce heat to low, cover and cook for 8 to 10 minutes, stirring often. Season with salt and pepper to taste.

2. To prepare Tortillas: Preheat a cast-iron skillet or griddle on stove over medium-high heat. Lay tortillas in single layers on skillet or griddle for about 10 seconds each. Turn and warm other side. Remove from heat, and wrap in a napkin or dishcloth until ready to assemble tacos.

3. To assemble, set a tortilla on a plate, and spoon on some filling. Top as desired, if using toppings, roll up, offer and eat.


PHILLY Savory Bruschetta

Yields: 2 dozen or 24 servings, 1 slice each.
Prep Time: 15 min minutes
Cook Time: 10 min

Ingredients:
1/4 cup olive oil
1 tsp hing
1 loaf (1 lb.) French bread, cut in half lengthwise
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
3 Tbsp. 100 percent vegetarian Grated Parmesan Cheese
2 Tbsp. chopped pitted ripe olives - Kalamata
1 cup chopped plum tomatoes
1/4 cup chopped fresh basil

PREHEAT oven to 400F. Mix oil and hing; spread onto cut surfaces of bread. Bake 8 to 10 minutes or until lightly browned. Cool.
MIX cream cheese and Parmesan cheese with electric mixer on medium speed until blended. Stir in olives.

SPREAD toasted bread halves with cream cheese mixture; top with tomatoes. Cut into 24 slices to serve. Sprinkle with basil.

Shortcut:
Prepare as directed, using 1 can (14-1/2 oz.) diced tomatoes, drained, for the chopped fresh tomatoes.Makes 2 dozen or 24 servings, 1 slice each.
 


Spinach, Pear, and Fennel Salad

The flavors in this salad are very different, but go together wonderfully.

Serving: 6
Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 70 minutes

Ingredients:
3 cups washed, stemmed, and torn spinach
2 cups sliced fennel stalks
3 ripe bosc pears, peeled, cored, and sliced
juice of 1 lemon
1 1/2 cups freshly grated parmesan cheese
olive oil
pear or raspberry vinegar
freshly ground pepper

1. Lightly dip the pear slices in the lemon juice to prevent browning.

2. Toss the spinach, fennel, and pears. Place in a large dish or in separate bowls. Sprinkle the salads with the cheese.

3. Dress the salads with the oil, vinegar, and pepper to taste, or serve alongside.

Cook's Note: The recipe the author uses says they prefer to coarsely grate the cheese rather than the really small pieces that you typically grate parmesan into. If you do not like parmesan cheese, you can substitute a sharp cheddar.


Churma Ladoo

Ingredients:
Wheat flour (coarse if possible) 2 cups
Ghee 3/4 cup
Ghee for frying
Jaggery - 1-1/4 cups
Dry grated coconut 1/2 cup
Khus khus (poppy seeds) 2 tbsps

Put the flour in a thali. Add ghee and mix well. Make stiff dough with water or milk. Roll into balls. Heat the ghee and deep fry on low heat till they are golden brown. Remove and cool. Break and crush them. Sieve the crumbled mixture through a coarse sieve. Melt jaggery till it starts bubbling. Add the coconut. Mix well and pour it over the wheat mixture. Mix well and make the ladoos while still warm. Roll each one in poppy seeds and then arrange on an offering plate.


Apple Ice Cream
 
Something a little different for dessert. I don't think I have ever seen this particular ice cream in any of the specialist outlets that I have been to. For this recipe, you need to use a crisp, juicy fleshed apple variety. In the UK the best one is called 'Fuji' but other varieties should be just as suitable. In NZ try Pacific Rose or Braeburn.
 
Serves 6
Preparation time - 1 hour
Cooking time - No cooking required
 
Each serving contains: 281 calories, 27g sugar,
7g fat, 12g saturates, 0g salt.
 
Ingredients:
500g (1lb 2oz) eating apples, peeled, cored and chopped
2 tablespoons lemon juice
75g (3oz) sugar
pinch cinnamon
2 teaspoons redcurrant jelly
284ml (10fl oz) carton whipping cream
fresh mint and apple slices to serve (optional)
 
Method:
1. Place the apples in a pan with the lemon juice and sugar and cook gently, keeping covered, for 5-6 minutes, until soft.
 
2. Beat in the cinnamon and redcurrant jelly and leave to cool.
 
3. Whip the cream until fairly thick, then fold it into the apple puree.
 
4. Pour into a plastic container, cover and freeze for 30 minutes.
 
5. Give the ice cream a stir and refreeze for a further 4-5 hours, or until completely frozen.
 
6. Decorate with fresh mint and sliced apple before serving.


Mango & Cranberry Smoothie
(low fat / no salt)
 
A simple smoothie for a hot day, with a great fruit flavour that kids will love. To make it richer you can replace the water with milk, but that will also add to the calories and fat content.
 
Serves 2
Preparation time - 10 minutes
Cooking time - No cooking required
 
Each serving contains: 290 calories, 30g sugar,
0.45g fat, 0.18g saturates, 0g salt.
 
Ingredients:
500ml/17½fl oz cranberry juice
Flesh of a mango
A ripe banana
100ml/3½fl oz water
 
Method:
1. Simply put all of the ingredients in a blender and whizz together.

The Vedic literature says like this, that God has no leg, no hand. Therefore the impersonalists take advantage of it. "Oh, here it is stated God has no legs, no hands." But the next line is, javana grhita: "He can accept everything which you offer Him in devotion."

Now how He can accept? If He has no hand, how He can accept things from us? That means He hasn't got a hand like us. His hand is different. Therefore even though He is situated in the spiritual world, which is far, far away from us, still, He says in the Bhagavad-gita, it is said,

patram puspam phalam toyam
yo me bhaktya prayacchati
tad aham bhakty-upahrtam
asnami prayatatmanah

Krsna says that "A little flower or little water or a little leaf, whatever My devotee offers Me in love and devotion, I accept it." And tad aham bhakty-upahrtam. "And because he has brought it with great devotion, therefore I eat." Tad aham bhakty-upahrtam asnami. Asnami means "I eat." Now you can say, "All right, I'll offer these fruits and flower to God, but it is the same. It is remaining. How He is eating?" But His eating is not like my eating, because He hasn't got a body like this. This body is material. If you bring me a plate of fruits, this body immediately swallows it. But He has got spiritual body. He eats... Simply as soon as He knows that you have offered it in devotion, He eats immediately.
