Fenugreek Sambar

Ingredients:
Tuvar dhal 3/4 cup
Chopped fenugreek leaves 1 cup
Cooked cubed potatoes 1 cup
Slit green chillies 4
Dry red chillies 2
Tamarind the size of a large lemon
Ghee 2 tbsps
Jaggery powder 1 tbsp
Rasam or sambar powder 2 1/2 tsps
Salt 2 tsps
Mustard seeds 1 tsp
Asofoetida 1 tsp
Split black gram dhal 1 tsp
Asofoetida powder 1/2 tsp

Cook the dhal with 1 1/2 cups of water in a pressure cooker. Churn till smooth and keep aside. Soak the tamarind in 1 1/2 cups of water, squeeze well and strain out the juice. Heat the ghee in a vessel, add the mustard, red chillies, black gram dhal and asofoetida. When the mustard seeds splutter, add the fenugreek, potato and green chillies. Fry for a few minutes then remove and set aside. In the same vessel, pour the tamarind juice and boil it with salt and jaggery powder for several minutes. Add the cooked dhal, the fried items and rasam or sambar powder. Boil until the sambar is reasonably thick. Remove and serve hot.

Dry Jhunka

Ingredients:
Besan (chick pea flour) , 3-1/2 ozs (100 g)
Tomatoes, one medium
Ginger powder, 2 teaspoons
Salt to taste
Coriander leaves
Cumin seeds, 1/2 teaspoon
Mustard seed, 1/2 teaspoon
Asofoetida, 1-1/2 teaspoons
Ghee for frying

Cut tomato into bits and mix it with besan, chopped coriander leaves, scant water and salt. Heat three tablespoons of ghee in a frying pan with. Add the cumin and mustard seeds to pan and fry till they splutter, then add asofoetida and ginger, and fry till brown. Pour the mixture of besan and tomato with salt and chopped coriander leaves into the pan. Continuously stir the content in the pan to till the mixture becomes almost dry and turns light brown.

KESAR BHAT

Ingredients :
1 cup rice
1/2cup sugar
1/4 tea spoon kesar
50 gms raisins
50gms cashew nuts
1/2 cup ghee
5 pods cardamom

Preparation :
Wash and cook rice in four cups water. Add ghee and sugar and continue cooking on low flame. Stir continuously. powder cardamom and add to the rice.. Keep cooking till the rice mixture leaves the sides of the vessel. Grind kesar and add to rice. Finally add raisins and chopped cashew nuts and mix well.

Methi Paratha

Makes:  7-8 Parathas

Ingredients:
1 bunch Methi (Fenugreek leaf)- picked and finely chopped
2 cups Wheat flour
2-3 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tsp Garam Masala
1 tsp Corriander Powder
1 tsp Cumin Powder
1 tsp Ajwain
1 tsp Ginger Garlic Paste
2 tbsp Yoghurt
1 tsp Sugar
Salt to taste
Oil

How to proceed:
1)Mix all ingredients and knead to a soft dough
2)Keep aside for 30 mins
3)Divide dough into 7-8 equal sized parts and form round balls
4)Roll each ball to thin parathas
5)Bake using oil/butter
6)Serve hot with Yoghurt or pickles!

Kacchori Recipe:

In memory of Bhakta Seva Prabhu, I thought I’d write down and share the kacchori recipe that he taught me many years ago, to the best of my memory it went something like this.

Filling:

2  large potatoes (peeled and boiled)
1/2 head of cabbage (chopped into tiny cubes and fried)

Chaunce:
(Heat a few tablespoons of ghee and add the below ingredients in the following order until they’ve
darkened a couple shades)

1 inch chunk of ginger (grated)
1 Tblsp Anise seeds
1 Tblsp Cumin seeds
1 Tblsp Caraway seeds (he always said it was theseÂ
(The three seeds that really made the filling)
A dash of hing/asafetida

Mash together:
Filling
Chaunce
An appropriate amount of salt

Crust:

Bhakta Seva always used a standard pie crust recipe. He mixed it in the food processor in order to avoid touching it with his hands, which would cause it to lose flakiness. He also refrigerated it for a couple of hours before use and rolled the kacchoris out on wax paper in the cooler, as otherwise the butter would melt and make the dough too sticky for use. A sample pie crust recipe is as follows (this may need to be doubled for the amount of filling - it’s been awhile since I made this):

1 Cup butter (grated or chopped while very cold)
2 Cups white flour
1 tsp salt
1/4 Cup water

After refrigerating, the dough can be divided into balls with an approximate 2 inch diameter. They should then be flattened into discs and rolled evenly into circles. An ample amount of filling should be placed  in the middle, then the sides should be brought up around it, pinched together and twisted until the excess dough  comes off. The kacchori should then be flattened into a very thick disc-like shape, and fried in ghee on medium heat until golden brown on the outside.

Sambar #2

Ingredients:
Tuar dal or yellow split peas - half cup
Okra - 10 or 12 (fresh or frozen) (optional)
Tomatoes - 3 large (or one can) - quartered
Tamarind paste - 1 tablespoon
Coriander powder - 2 tablespoon
Chilli powder - 1 tablespoon
Turmeric powder - 1 teaspoon
Methi powder - 1/2 teaspoon
Asofoetida - 1/2 teaspoon
Mustard seeds - 1/4 teaspoon
Methi seeds - 1/4 teaspoon
Ghee - 1 tablespoon
Salt to taste
Coriander leaves, chopped - 4 Tablespoons
Curry leaves - a few (optional)

Cook the dal with turmeric powder, chilli powder and sufficient water. Cut the okra in two inch pieces and saute them in a frying pan with one teaspoon ghee till dry and slightly browned. Mash the cooked dal with a wooden spoon and add the salt, coriander powder, methi powder, asofoetida and the tamarind extract. Simmer for a few minutes and add the tomatoes and okra and half of the coriander leaves. When the vegetables are cooked , heat oil in a fry pan and pop the mustard seeds. Remove pan from the fire, add the curry leaves and methi seeds. Add this seasoning to the sambar and garnish with the rest of the coriander leaves.

Vegetarian Summer Roll (Rice Paper Wrap)

Ingredients:
2 limes, juiced
Segments of 1 lime
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1/4 cup grape seed oil
1/4 cup Thai basil leaves, whole
1/2 pound bean sprouts, hair removed
1 medium sized red bell pepper, julienned
1 medium sized carrot, peeled, julienned
1 small package smoked tofu or tempeh, julienned
1 package rice papers, 10 to 12 inches diameter, rehydrated
Salt and black pepper, to taste

In a bowl whisk together juice, lime, mustard and sugar. Whisk in the oil and season. Toss with all the vegetables and tofu. Check for seasoning. Lay out 1 wrapper and place a small mound of mix near the bottom. Roll bottom towards the middle. Fold in both sides and continue rolling. Finish roll and let rest. Individually wrap each roll with plastic wrap. Will hold for 2 hours in the fridge. Remove wrap, slice on the bias and serve on top of extra salad.

Doodhi Raita

Ingredients:
Yoghurt, 2 cups
Doodhi (pumpkin), grated, 1/4 Pound
Cumin seeds, roasted & ground, 1 Teaspoon
Sugar, 1 Tablespoon
Charoli (or pine nuts), 1 Tablespoon
Ginger, minced, 1 Inch
Raisins, 1 Tablespoon
Garam masala, 1/2 Teaspoon
Coriander leaves, Handful
Cayenne, 1/2 Teaspoon
Salt, To taste

Peel and grate the pumpkin, then steam until cooked soft. Set aside to cool. Mix all the remaining ingredients. Gently fold in the shredded pumpkin, chill and offer.

Blackberry Almond Chatni

Ingredients:
Blackberries, fresh, 2 Cups
Almonds, sliced, 1 Cup
Ginger, fresh, 2 Inches
Raisins, dark, 1/2 Cup
Coriander, powder, 1 Teaspoon
Cumin seeds, 1 Teaspoon
Anise, ground, 1/8 Teaspoon
Red Chilis, flaked, 1/4 Teaspoon
Jaggery, 1/2 Cup
Butter, 2 Tablespoons

Put the butter in the bottom of a heavy pan. Add the almonds and cook till they brown a few shades. Add the chilis, minced ginger and raisins and cook until the raisins plump. Add all remaining ingredients except anise and jaggery, and cook on low heat until the berries break down completely. Add the jaggery and continue cooking for another 30 minutes on low heat, until the chutney takes on a good glaze. Remove from heat, stir in the anise powder. Bring to room temperature or cool, and offer.
 

Gopi Jamuns

Ingredients:
Pineapple, cubed, 1 Cup
Sugar, 1 Cup
Rava (semolina), 2 Tablespoons
Milk, 1/2 Cup
Chenna, 1 Cup
Milk for Chenna, 1/2 Quart
Lemon Juice for chenna, 5 Tablespoons
Saffron, A Pinch
Ghee, For frying

Soak the saffron in a teaspoon of milk and set aside. Roast the rava and spread on a plate to cool. Add the chenna and remaining milk to the rava and knead it to a smooth, hard dough. Divide the dough into lemon-sized balls. Cut the pineapple into cubes. Insert one cube into each jamun ball and roll dough to completely encase the fruit. Heat ghee in a wok or kadhai and fry the jamuns at low heat until dark golden brown. Make the syrup by bringing one cup of water and the sugar to a boil for several minutes. Add the saffron and stir in. Remove from heat, add the fried jamuns to the sugar syrup. Serve hot.

Sweet Cream & Honey

Ingredients:
Light cream, 1 Quart
Honey, 6 Tablespoons
Saffron, 2 Pinches
Almond extract, 1/2 Teaspoon
Apple Juice, 1 Pint

Mix all ingredients together and blend well. Keep chilled. Just before offering, beat with a hand mixer or in blender for just a minute or two, to get a little fluffy. Serve on cubed ice.
 

KAAJU BURFI OR KAJU KATLI

Ingredients :
2 cups of finely grounded Cashew powder
1/4 cup Milk
3/4 cup Sugar
Few silver vark for decoration

Preparation :
1. Heat milk in a large pot and add sugar.
2. When it starts bubbling remove from stove and add cashew powder little at a time. Mix well making a thick form. You may add more powder if needed for making thick.
3. Pour the mix on a wax paper or thali. Press and spread with your palms for making thin burfi.
4. Put silver vark on top if you wish.
5. Let it cool completely before cutting in burfi shape.
6. Put in a airtight container and keep in a cool place.

The Vedic literature says like this, that God has no leg, no hand. Therefore the impersonalists take advantage of it. "Oh, here it is stated God has no legs, no hands." But the next line is, javana grhita: "He can accept everything which you offer Him in devotion."

Now how He can accept? If He has no hand, how He can accept things from us? That means He hasn't got a hand like us. His hand is different. Therefore even though He is situated in the spiritual world, which is far, far away from us, still, He says in the Bhagavad-gita, it is said,

patram puspam phalam toyam
yo me bhaktya prayacchati
tad aham bhakty-upahrtam
asnami prayatatmanah

Krsna says that "A little flower or little water or a little leaf, whatever My devotee offers Me in love and devotion, I accept it." And tad aham bhakty-upahrtam. "And because he has brought it with great devotion, therefore I eat." Tad aham bhakty-upahrtam asnami. Asnami means "I eat." Now you can say, "All right, I'll offer these fruits and flower to God, but it is the same. It is remaining. How He is eating?" But His eating is not like my eating, because He hasn't got a body like this. This body is material. If you bring me a plate of fruits, this body immediately swallows it. But He has got spiritual body. He eats... Simply as soon as He knows that you have offered it in devotion, He eats immediately.
