Social scientists and law enforcement officials have identified animal abuse as a symptom of emotional illness and a precursor to violent crimes against human beings. To allow individuals guilty of perpetrating such cruel acts to go unpunished or not sufficiently punished would be to sanction these horrific crimes and would permit them to go on to possibly commit violent crimes against humans.

Bahut Dahl - many dahls spicy soup

Ethnicity : North Indian
Type of Meal : Teatime, Party
Type of Dish : Snacks
 
Main Ingredients :
Moong Dahl, Masoor Dahl, Urad Dahl, Channa Dahl

Ingredients :
1 tablespoon - moong dahl
1 tablespoon - masoor dahl
1 tablespoon - urad dahl
1 tablespoon - chana dahl
2 tablespoons - toovar dahl
1 teaspoon - cumin seeds
1 - white cabbage finely chopped grated
2 teaspoons - coriander powder
1 teaspoon - chilli powder
1/2 teaspoon - turmeric powder
2 tablespoons - chopped coriander leaf
3 tablespoons - ghee
1/2 teaspoon - hing
salt to taste

For The Tempering :
2 tablespoons - butter
1 chopped - tomato
1 teacup - fresh curds - yogurt
1/2 teaspoon - garam masala

Method :
1. Wash all the dahls. Soak for 1 hour and then drain.
2. Heat the ghee. Add the cumin seeds and cook until they begin to crackle.
3. Add the finely chopped grated cabbage and cook until light pink.
4. Now add all the dahls and cook again for 4 to 5 minutes.
5. Add 1 litre of water and cook on a slow flame until soft.
6. Then add the coriander powder, chilli powder, turmeric powder and salt.
7. Cover and cook until two thirds of the water has evaporated.
8. Mash the dals lightly.
9. Prepare the tempering (chaunce) by melting the butter, adding the tomato, curds and garam masala and hing and cooking on a slow flame for 1 to 2 minutes.
10. Add to the cooked dahls and stir for 3 to 4 minutes.
11. Sprinkle coriander leaf on top and serve hot.

Cooking Time : 40 min.
Preparation Time : 10 min.
Serves : 6.

Chickpea-Rice Casserole

Serves 6

Heating and popping the mustard seeds make their flavor a nutty, not hot, addition to this fragrant rice casserole. For best results, use a mild vegetable broth, such as Imagine or Swanson, preferably one not made with tomatoes.

Ingredients:
2 tsp. olive oil or canola oil
2 Tbs. mustard seeds
1 tsp. cumin seeds
1 small cabbage heart, peeled and chopped (about 3/4 cup)
1 Tbs. minced fresh ginger
2 1/4 cups low-sodium vegetable broth
1 cup basmati rice
1 cup cooked or canned chickpeas, drained
1/3 cup dried currants
1 medium-sized carrot, peeled and shredded
1/3 cup chopped fresh cilantro, for garnish
1/3 cup roasted cashews, coarsely chopped, for garnish

Preheat oven to 350F. Heat 1 tsp. oil in 6-qt. Dutch oven over medium-high heat. Add mustard and cumin seeds. When mustard seeds begin to pop (after about 30 seconds), turn off heat, and transfer spice mixture to small bowl; set aside.
Heat remaining 1 tsp. oil in Dutch oven over medium heat. Add finely chopped cabbage heart and ginger, and cook, stirring often, 6 minutes, or until cabbage is softened. Stir in spice mixture, broth, rice, chickpeas, currants and carrot.
Cover and bake 45 minutes, or until rice is tender and broth is absorbed. Garnish with cilantro and cashews, and serve hot.

Tamatar Ki Kadhi

Ethnicity: North Indian
Type of Meal: Lunch, Dinner, Breakfast
Type of Dish: Side Dishes

Cooking Time : 30 mins.
Preparation Time : 10 mins.
Serves : 4.

Ingredients
4 - large tomatoes
1/2 teaspoon - mustard seeds (rai)
1/2 teaspoon - cumin seeds (jeera)
1 - green chilli, chopped
5 to 6 - curry leaves
2 - cloves
2 tablespoons - Bengal gram flour (besan)
1/4 teaspoon - turmeric powder (haldi)
2 teaspoons - chilli powder
a pinch - asafoetida (hing)
2 tablespoons - jaggery (gur), grated
2 tablespoons - oil
salt to taste

For The Garnish :
1 tablespoon - chopped coriander

Method :
Roughly chop the tomatoes and cook them with 1/2 cup of water for about 10 to 15 minutes.
Cool and liquidize in a food processor to a get a smooth puree. Keep aside.
Heat the oil in a saucepan and add the mustard seeds and cumin seeds.
When they crackle, add green chilli, curry leaves, cloves and gram flour and cook for 2 to 3 minutes.
Add the turmeric, chilli powder, asafoetida and pureed tomatoes with 2 cups of water.
Cook on a medium flame, stirring continuously.
When the kadhi comes to a boil, add the jaggery and salt and simmer for another 5 minutes.
Remove from the fire.
Garnish with the coriander and serve hot with rice.

Tofu Adobo

Adobo is a very popular method of cooking in the Philippines, perhaps, is the most popular and most distinguished among all Filipino cuisines and sadly, is mostly associated with meat. But it has simple ingredients and very flexible procedures so I come up with my own version of vegetarian adobo. You can either cook it right away or have it marinated and cook the next day either way the result is the same, yummy!

Tofu Adobo

Ingredients:
sliced tofu (sliced as you like but just thick enough in size; I cut mine in triangular shape)
1/2 cup lemon juice
6 pieces of slice lemon
1/2 cup of soy sauce or bragg aminos
dried bay leaves
1 tsp salt
1 tsp sugar
1/2 tsp black pepper
sliced ginger (about 1/4 cup)
1 tbsp of oil
1 tsp of sesame oil

Procedure:

1. Drained and sliced the tofu and deep fry, set aside.
2. Slice the lemon and ginger and set aside.
3. In a bowl combine the soy sauce, lemon juice, bay leaves, salt, pepper and sugar stir well, this will be our adobo sauce.
4. In hot pot, put the oil and saute’ the sliced lemon, ginger and about 3 pieces of bay leaves.
5. Stir in the fried tofu and let it simmer for 2 minutes.
6. Add the adobo sauce,mix well and make sure that the tofu are fully coated with the sauce, simmer for 2 -3 minutes then add the sesame oil.
7. Offer and serve with love  Hare Krishna!

Kiwi Fruit Salsa

Ingredients:
3 Kiwi fruit, peeled
1 pear, firm, peeled and cored
1 to 3 jalapenos, cleaned and seeds removed
1 orange zest and juice
1 lime zest and juice
1 lemon zest and juice
sugar, to taste
white vinegar, to taste
salt, to taste

Zest orange, lime and lemon. Squeeze juice from orange, lime and lemon.
Combine all ingredients in blender and puree well. Chill.

Lemon and Melon Mousse
 
This works well as a starter but is equally delicious as a dessert. Either way, the freshness of the melon really invigorates the palate and the cream is a real bonus.
 
Serves 1-2

Ingredients:
75ml/2½fl oz double (heavy) cream
½ melon, peeled, de-seeded and diced
squeeze of honey
squeeze of lemon juice
a few melon slices
sprig of fresh mint, to garnish
 
Method:
Place the melon pieces into a food processor and blend together to form a purée.
Place the cream and melon purée into a large bowl with the honey and lemon juice. Whisk together until just stiff.
Spoon the mousse into a tall serving glass or serving bowl and arrange the melon slices on top.
Garnish with the mint to serve.

Candied Citrus Peel
 
Ingredients:
3 cups citrus peel, cut into strips from:
4 to 5 medium oranges
6 medium. lemons
2 medium to large grapefruit
12 cups cold water
2 1/2 cups sugar
1/2 cup honey
1 3/4 cups boiling water
 
1. Wash the fruit. Score peel into quarters. Remove sections of peel with fingers; cut into uniform strips about 3/8 in. wide. Boil peel with 6 cups cold water, uncovered, for 10 minutes. Drain and rinse. Repeat process with 6 cups fresh water.
 
2. In a large saucepan, combine 1 1/2 cups sugar, honey and boiling water. Bring to a boil, and boil about one minute. Add cooked, drained peel and briskly simmer until almost all of the syrup has been absorbed.
 
3. Transfer peel to a collander. Drain well (about 10 minutes). In large bowl, toss drained peel with remaining 1 cup sugar to coat well. Spread pieces out on waxed paper to dry. Store in a tightly covered container.

Little Lemon Creams
 
Take three ingredients and you'll soon have a luscious dessert to offer and later to dive into.
 
Serves 6-10 (depending on size)

Ingredients:
500ml (18fl oz) double (heavy) cream
140g (4½oz) caster (refined granulated) sugar
juice of 2 lemons
 
Method:
Place the cream and sugar in a saucepan and bring to the boil.
Simmer for 3 minutes, remove from the heat and whisk in the juice. Spoon into small cups , glasses or bowls and chill for 3 hours before serving.

Note: If you want to make these lemony deserts more zesty, simply grate in the rind of 1 lemon and mix with the lemon juice before adding to the boiled cream and sugar.

For orange creams, replace the juice of 2 lemons with the grated rind and the juice of 1 orange.

The Vedic literature says like this, that God has no leg, no hand. Therefore the impersonalists take advantage of it. "Oh, here it is stated God has no legs, no hands." But the next line is, javana grhita: "He can accept everything which you offer Him in devotion."

Now how He can accept? If He has no hand, how He can accept things from us? That means He hasn't got a hand like us. His hand is different. Therefore even though He is situated in the spiritual world, which is far, far away from us, still, He says in the Bhagavad-gita, it is said,

patram puspam phalam toyam
yo me bhaktya prayacchati
tad aham bhakty-upahrtam
asnami prayatatmanah

Krsna says that "A little flower or little water or a little leaf, whatever My devotee offers Me in love and devotion, I accept it." And tad aham bhakty-upahrtam. "And because he has brought it with great devotion, therefore I eat." Tad aham bhakty-upahrtam asnami. Asnami means "I eat." Now you can say, "All right, I'll offer these fruits and flower to God, but it is the same. It is remaining. How He is eating?" But His eating is not like my eating, because He hasn't got a body like this. This body is material. If you bring me a plate of fruits, this body immediately swallows it. But He has got spiritual body. He eats... Simply as soon as He knows that you have offered it in devotion, He eats immediately.
