Social scientists and law enforcement officials have identified animal abuse as a symptom of emotional illness and a precursor to violent crimes against human beings. To allow individuals guilty of perpetrating such cruel acts to go unpunished or not sufficiently punished would be to sanction these horrific crimes and would permit them to go on to possibly commit violent crimes against humans.

Kurma's Khichari recipe.

Hearty One-pot Melange of Mung Beans, Rice & Vegetables (Khichari)

Khichari (pronounced "kitch-eri") is such an important dish for vegetarians that I have included a different recipe for it in each of my cookbooks. The flavoursome, juicy stew of mung beans, rice and vegetables is both nutritious and sustaining. It can be served anytime a one-pot meal is required You can practically live on khichari, and in fact, some people do. I eat it accompanied by a little yogurt, some whole-wheat toast, lemon or lime wedges and topped with a drizzle of melted ghee. Bliss! Serves 4-6.

Ingredients:
½ cup split mung beans,
washed and drained 6 cups water
1 bay leaf 1.5cm
(½-inch) chunk ginger,
chopped fine 1 small green chili, seeded and chopped
½ teaspoon turmeric
2 teaspoons coriander powder
1 cup Thai rice, or other long grain rice of your choice
1 packed cup each broccoli, potato cubes and quartered Brussels sprouts, or veg of your choice
2 ripe tomatoes, chopped
1½ teaspoons salt
2 tablespoons ghee
2 teaspoons cumin seeds
small handful curry leaves
½ teaspoon yellow asafetida powder
½ cup chopped fresh coriander leaves
wedges of lemon,
some chilled yogurt,
and extra ghee for serving

Bring to a boil in a saucepan the mung beans, water, bay leaf, ginger, chili, turmeric and coriander, then reduce to a simmer, and cook, partially covered, for about 15 minutes, or until the beans start to break up.

Add the rice, vegetables, tomatoes and salt, increase the heat, and stirring, bring to a boil, then return to a simmer, covered. Cook, stirring occasionally, for another 10-15 minutes, or until the rice is soft.

Season: heat the ghee in a small saucepan over moderate heat. Sprinkle in the cumin seeds, fry until a few shades darker, and add the curry leaves – careful, they crackle. Sprinkle in the yellow asaffetida powder, swirl the pan and empty the fried seasonings into the khichari. Stir the seasonings through, then return to a simmer and cook for another 5 minutes or so, or until the rice is fully swollen and soft. If you desire a moist khichari, add a little boiling water now.

Serve: fold in the fresh coriander, and serve the khichari piping hot with a drizzle of warm ghee, and the accompaniments suggested above.

Vegetarian 10-minute tortellini
You can't get much easier than this meal idea - it's on the table in 10 minutes at the most and requires only five ingredients.

Ingredients:
300g pack fresh spinach and cheese tortellini
1 Tbsp olive oil
250g pack cherry tomatoes
1 bunch parsley, leaves roughly chopped
3 Tbsp finely grated Parmesan

Method:
Boil the pasta for 2 minutes until just cooked. Meanwhile, heat the oil in the frying pan and sizzle the tomatoes until they start to blister.

When the pasta is cooked, drain it quickly, reserving some cooking water. Put the tomatoes back on a high heat. Tip in the pasta, parsley, a splash of cooking water and most of the Parmesan. Bubble everything together, season to taste. Offer and serve with remaining Parmesan.

Baked Cauliflower with Mature Cheddar Cheese
 
This has always been a British favourite as a sensational side dish or fuss-free veggie main course.
 
Serves 2
Preparation time - 40 minutes
Cooking time - 20 minutes
 
Ingredients:
1 small cauliflower
80g/3oz butter
80g/3oz flour
400ml/14fl oz milk
800g/1¾lb mature Cheddar cheese, grated
1 pinch salt and fresh ground black pepper
 
Method:
1. Remove the outer leaves from the cauliflower and coarsely chop.

2. Place the cauliflower and leaves in a saucepan with about 2.5cm/1in of water. Cook on a medium heat for 10 minutes (you want them slightly undercooked as they will be going in the oven too).

3. Set the oven to 170°C/325°F/Gas 3.

4. In a separate saucepan, melt the butter and whisk in the flour. Cook for two to three minutes, stirring constantly.

5. Add the milk, whisking continuously to ensure that no lumps form. Stir in the grated cheese.

6. Place the cauliflower in a lightly buttered gratin dish and pour over the cheese sauce. Bake for 20 minutes and then serve immediately.

Dumplings in Lentil Curry
Ingredients:
1 cup tuwar dal
2 tbsp peanuts, soaked in water for 30 minutes
1 tsp cumin seeds
1/2 tsp turmeric powder
l/2 tsp chili powder
2 tsp sugar
1 cup coriander leaves, chopped
6 curry leaves
1/4 tsp asafoetida
Required ghee or butter
Salt to taste

For the dumplings:
1 cup wheat flour
1/2 tsp turmeric
1/2 tsp chili powder
l/2 tsp asafoetida
Sufficient oil
Salt to taste

Method:
Boil the dahl and the peanuts in a pressure cooker till soft and keep aside.
Heat 1 tbsp ghee in a pan and add cumin seeds, garlic, asafoetida and finally, the boiled dahl.
Add turmeric powder, chili powder, sugar and curry leaves. Boil and add salt to taste.
To make the dumplings, mix the flour with salt, turmeric, chili powder, asafoetida, little oil and make a stiff dough with water.
Knead well and roll out into 10 cms discs.
Cut the discs into diamonds or squares with a knife and drop them into the boiling dahl mixture.
After all the dumplings are immersed, boil the dahl for a further 15 minutes on a low heat.
Garnish with coriander leaves and serve hot.
Serves: 6
Preparation time: 30 minutes

GREEK-FLAVORED POTATO SALAD
6 servings

This salad makes a delicious contribution to a buffet of room-temperature dishes for company.
Ingredients:
5 to 6 medium-large red-skinned potatoes, scrubbed
10 to 12 ounces fresh green beans (or substitute
             one 10-ounce package frozen cut green beans, thawed)
1/2 cup chopped pitted black olives, preferably cured
4 ounces feta or crumbled goat cheese (such as Montrachet)
1/2 cup natural low-fat vinaigrette, preferably balsamic vinaigrette
Freshly ground pepper to taste

1. Bake or microwave the potatoes until done but still firm. When cool enough to handle, but warm, cut into large dice.

2. If using fresh green beans, trim them and cut them in half crosswise. Steam the fresh or frozen green beans with a little water in a covered saucepan, or in a covered container in the microwave, until tender-crisp, about 5 minutes. Refresh under cool water until just warm, then drain thoroughly.

3. Combine the potatoes and green beans in a serving container with the remaining ingredients and toss well. This is best served just warm or at room temperature.

Gulab Jamun and English Summer Fruits
 
Mike says "I couldn't stay totally away from summer, so I have added some fruit to this traditional, very sweet version, of an Indian donought."
 
Serves 4-6
Preparation time - 20 minutes
Cooking time - 10-30 minutes
 
Ingredients:
For the gulab jamun:
vegetable oil, for deep frying
225g/8oz powdered milk
110g/4oz plain flour
1¼ tsp baking powder
½ tsp bicarbonate of soda
350ml/12fl oz double (heavy) cream
25g/1oz butter, melted
For the syrup:
75ml/3fl oz water
200g/7oz caster (refined granulated) sugar
1 lemon, juice only
To serve:
150g/5oz strawberries, hulled
150g/5oz raspberries
4 tbsp icing (confectioners) sugar
 
Method:
1. Preheat the vegetable oil in a deep fat fryer to 170°C/350°F/Gas 4.
2. Place the milk powder, flour, baking powder and bicarbonate of soda into a bowl and mix to combine.
3. Add 100ml/3½fl oz the cream and mix well.
4. Add the butter and as much extra cream as necessary to form a soft, slightly sticky dough.
5. Roll the dough into small balls and carefully place into the deep fat fryer. Fry for 2-3 minutes until golden and completely cooked through. Carefully remove the cooked balls with a slotted spoon and drain on kitchen paper.
6. For the syrup, place the water, sugar and lemon juice into a pan over a medium heat and bring to the boil. Reduce the heat and simmer for 1-2 minutes.
7. Carefully place the jamun balls into the syrup and roll around to completely coat. Remove from the heat and leave to absorb the syrup for ten minutes.
8. To serve, place the strawberries and raspberries into a bowl and sprinkle with the icing sugar, stirring gently to coat evenly.
9. Place the strawberries and raspberries onto a large serving dish and top with the gulab jamun.

....excerpt from lecture by HDG Srila A.C. Bhaktivedanta Swami Prabhupada - Srimad-Bhagavatam 1.3.1-3 -- San Francisco, March 28, 1968

The Vedic literature says like this, that God has no leg, no hand. Therefore the impersonalists take advantage of it. "Oh, here it is stated God has no legs, no hands." But the next line is, javana grhita: "He can accept everything which you offer Him in devotion."

Now how He can accept? If He has no hand, how He can accept things from us? That means He hasn't got a hand like us. His hand is different. Therefore even though He is situated in the spiritual world, which is far, far away from us, still, He says in the Bhagavad-gita, it is said,

patram puspam phalam toyam
yo me bhaktya prayacchati
tad aham bhakty-upahrtam
asnami prayatatmanah

Krsna says that "A little flower or little water or a little leaf, whatever My devotee offers Me in love and devotion, I accept it." And tad aham bhakty-upahrtam. "And because he has brought it with great devotion, therefore I eat." Tad aham bhakty-upahrtam asnami. Asnami means "I eat." Now you can say, "All right, I'll offer these fruits and flower to God, but it is the same. It is remaining. How He is eating?" But His eating is not like my eating, because He hasn't got a body like this. This body is material. If you bring me a plate of fruits, this body immediately swallows it. But He has got spiritual body. He eats... Simply as soon as He knows that you have offered it in devotion, He eats immediately.

According to recent communications with ChelseaSugar group - NZ Sugars their Sugars are now free from "Bone Char" bleaching process and so devotees can again use and offer White Sugar safely.
